I’ve never been much of a cook, but I am a creative, which means when you get in a situation for which you have no explanation, you just make something up. Let’s consider Halloween 2014. While trying to answer the door and pass out treats, I’m looking for an easy recipe for supper. Spaghetti. If you can’t do anything else, you can always cook spaghetti. If you are what you eat, then my kids are spaghetti.
So, in between trick or treaters, I cut up the onions, brown the meat and pour in the secret sauce out of a jar that I brought at the grocery story. Nice. Everything is on schedule. Then I realize that I have about 20 spaghetti noodles. I counted them! Hmm. What to do? Well, being a great lover of rice, I decided to cook a pot of rice and serve the spaghetti over the 20 noodles and a pot full of rice. I know the Food Channel is looking for me as I speak!
Actually, it tasted really good! I learned a good lesson years ago from south Louisiana rice farmer Kevin Berken. While interviewing him for an article for Rice Farming magazine, I asked him what advice he would give the public regarding rice. Without hesitation, Kevin laughingly said, “I would tell everyone to cook a pot of rice every day, whether they eat it or not!” I’ve never forgotten that, and I still cook a lot of pots of rice. Thank goodness it paid off when I only had 20 spaghetti noodles to go with my delicious “homemade” recipe.
